Ratatouille - cooking recipe

Ingredients
    1/3 c. olive oil
    3/4 c. onion
    2 cloves garlic
    4 green peppers
    2 1/2 c. peeled, diced eggplant
    3 c. zucchini
    2 c. chopped tomatoes
    salt and pepper
    parsley
Preparation
    In medium saucepan with lid, saute onions and garlic in olive oil.
    Remove/discard onions and garlic.
    Add, in layers, remaining ingredients to saucepan.
    Sprinkle with olive oil.
    Cover and simmer over very low heat, 35 to 45 minutes.
    Uncover and heat 10 minutes.
    Serve over pasta, rice or couscous.
