Minestrone Soup - cooking recipe

Ingredients
    1 lb. Italian sweet sausage
    1 Tbsp. olive oil
    1 c. chopped onions
    1 clove garlic, minced
    1 c. sliced carrots
    1 tsp. basil or Italian seasoning
    2 small zucchini, sliced
    1 can Italian pear tomatoes, chopped (undrained)
    2 cans beef broth or 3 bouillon cubes and 1 1/2 c. water
    2 c. finely shredded cabbage
    1 tsp. salt
    1/4 tsp. pepper
    1 (1 lb.) can Great Northern beans
    fresh parsley, chopped
Preparation
    Slice sausage about 1/2-inch thick and brown in oil.
    Drain most of oil off.
    Add onions, garlic, carrots and spices.
    Cook for 5 minutes.
    Add zucchini, tomatoes with liquid, bouillon, cabbage, salt and pepper.
    Bring soup to a boil; reduce heat and simmer, covered, for about an hour.
    Add beans with the liquid and cook another 20 minutes.
    Serves 8.
