Texas Chicken And Rice - cooking recipe

Ingredients
    2 Tbsp. oil
    1/2 c. finely chopped onion
    1/2 c. finely chopped pepper
    2 medium tomatoes, cubed
    2 cloves garlic, minced
    2 chicken breasts, cooked and cubed
    1 1/2 c. chicken bouillon
    1 bay leaf
    1/2 tsp. oregano
    1/2 tsp. red pepper
    dash of black pepper
    1 1/2 c. instant rice
    picante sauce
Preparation
    In large frying pan, saute onions, peppers, tomatoes and garlic in oil for about 5 minutes.
    Add chicken.
    Stir in bouillon and spices.
    Bring to a boil.
    Stir in rice.
    Cover and remove from heat.
    Let stand until rice is tender.
    Serve with tortilla chips and picante sauce.
    Serves two or three.
