Sun-Dried Tomato Pesto Butter - cooking recipe

Ingredients
    1/3 c. softened sun-dried tomatoes, drained if packed in oil
    1/4 c. grated Parmesan cheese
    1 1/2 tsp. minced garlic
    1/2 c. butter (1 stick), softened and cut in chunks
    1/4 tsp. salt
    1/8 tsp. ground black pepper
Preparation
    In the bowl of a food processor, place tomatoes, Parmesan cheese and garlic; whirl until tomatoes are finely chopped.
    Add butter, salt and black pepper; whirl until combined.
    Pack into covered containers and refrigerate or freeze until ready to serve. Use as a spread for toasted Italian bread or on hot pasta or rice.
    Can be melted and basted on chicken or fish.
