Vegetable Stuffing(Diabetic) - cooking recipe

Ingredients
    2 medium onions, chopped
    small head cauliflower
    1 c. mushrooms, sliced
    1/2 c. chopped celery
    1 tsp. poultry seasoning
    1 (20 oz.) bag frozen carrots or 3 c. fresh
    1 Tbsp. oil
Preparation
    Saute onions, mushrooms and celery in oil.
    Steam carrots and cauliflower until tender.
    Mash all vegetables or puree in blender.
    Add poultry seasoning.
    Stuff in bird and cook immediately, or cook in casserole at 350\u00b0 for 40 to 45 minutes. (For a 10 to 12 pound turkey, double the recipe.)
    Yields 6 servings.
