Black Bean Soup - cooking recipe
Ingredients

1 c. black beans
1 tsp. coriander
1 c. onion
1 c. celery
4 cloves garlic
4 c. broth
salt
3/4 lb. sausage, sliced
1/4 tsp. ground red pepper
3 Tbsp. dry Taylor sherry
2 c. rice, uncooked
1/2 pt. sour cream
Preparation
-
Wash beans and soak overnight.
Saute onion, celery and garlic in oil.
Drain beans and add seasonings.
Simmer several hours (3 to 4) in broth.
Add sliced sausage and continue to cook (30 to 45 minutes) until sausage is done.
Add sherry.
Cook rice.
Serve beans on rice with a dollop of sour cream.
