Pear-Yogurt Light Muffins - cooking recipe
Ingredients

2 c. flour
1/3 c. sugar
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 slightly beaten egg
1/4 c. milk
1 (8 oz.) carton plain yogurt
1/4 c. cooking oil
1 tsp. finely shredded lemon peel
2 Tbsp. lemon juice
1 (8 oz.) can pears, drained and diced
Preparation

Dry ingredients can be mixed night before.
In medium bowl, stir flour, sugar, baking powder, soda and salt.
In a small bowl, stir together egg, yogurt, milk, oil, lemon peel and juice.
Add to dry ingredients with diced pears.
Stir until mixed.
Fill greased muffin cups 2/3 full.
Bake in 400\u00b0 oven for 20 to 25 minutes until golden brown.
Makes 16 muffins.
