Orange Carrot Cake With Buttercream Icing(Heritage Recipe) - cooking recipe
Ingredients

3 c. all purpose flour
2 c. sugar
1 c. coconut
2 1/2 tsp. baking soda
2 1/2 tsp. ground cinnamon
1 tsp. grated orange peel
1 tsp. salt
1 1/4 c. cooking oil
2 tsp. vanilla
11 oz. can (1 1/3 c.) mandarin oranges, undrained
2 c. shredded carrots (4 medium)
3 eggs
Preparation

heat oven to 350 degrees.
Grease 9 x 13 inch pan.
In large bowl, blend all cake ingredients, beat two minutes at high speed. Pour into greased pan and bake for 45 to 55 minutes or until a toothpick comes out clean.
Cool before removing pan.
