Crunchy Rhubarb Cake - cooking recipe
Ingredients

1 3/4 c. sugar
1/2 c. shortening
1 egg
1 c. sour milk or buttermilk
2 c. flour
1 tsp. soda
1/4 tsp. salt
vanilla
2 c. diced rhubarb
2 tsp. cinnamon
1/2 c. walnut pieces (optional)
Preparation

Cream 1 1/2 cups sugar and shortening.
Add egg and beat.
Mix in next 5 ingredients.
Add rhubarb to batter; mix well.
Combine remaining 1/4 cup sugar with cinnamon for topping on batter in a 9 x 13-inch pan.
Bake at 350\u00b0 for 35 minutes, until golden brown. Bake longer if using frozen rhubarb.
