Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant, peeled and sliced 1/2-inch thick
    onions
    green peppers, chopped
    tomatoes, sliced
Preparation
    Layer eggplant, onions and green peppers.
    Sprinkle with salt, pepper, basil, pepper and Parmesan.
    Build up above top of casserole.
    Top with grated Cheddar cheese.
    Bake at 350\u00b0 for 1 1/2 hours.
