Spicy Bean, Corn And Pepper Salad - cooking recipe

Ingredients
    2 Tbsp. apple juice, undiluted
    1/2 c. salsa
    2 c. cooked black or red beans, rinsed and drained
    1/3 c. red bell pepper, chopped
    1 Tbsp. vinegar
    1/4 tsp. black pepper
    1 c. canned low sodium corn, rinsed and drained
    2 scallions, diced
Preparation
    In a small bowl, combine apple juice, vinegar, salsa and black pepper.
    In another bowl, combine beans, corn, peppers and scallions.
    Pour in salsa mixture.
    Chill for at least 1 hour. Serves 8.
