"Creamy" Carrot Soup - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    1 c. coarsely chopped onion
    1/2 tsp. ginger
    1/4 tsp. curry
    1/4 c. uncooked rice
    2 lb. sliced carrots
    10 c. chicken broth
    salt and pepper to taste
Preparation
    Heat oil in a heavy pot; add onion and cook until soft.
    Add broth, carrots and rice.
    Cook for 30 minutes.
    Cool soup.
    Puree soup in blender.
    Return to pot and heat gently.
    Serves 8.
