Lithuanian Pressed Chicken - cooking recipe

Ingredients
    chicken
    salt and pepper
    1 onion
Preparation
    Place chicken in soup pot seasoned with salt, pepper and onion.
    Cover with water and cook over medium heat until chicken is tender.
    Remove chicken from liquid.
    Remove skin and bones. Cut meat into small cubes.
    Put meat back into liquid and cook for 1/2 hour more.
    Remove chicken from pot.
    Press chicken into a Pyrex dish.
    Pour liquid just to cover chicken.
    Refrigerate overnight.
    Serve chilled, sliced thin; garnish with parsley.
