Huevos Rancheros - cooking recipe

Ingredients
    8 Tbsp. oil
    8 mini corn tortillas
    8 eggs
    salsa
    1/2 c. cheese
Preparation
    Heat oil and soften tortillas on both sides by dipping them in hot oil.
    Drain and set aside in warmer.
    Fry eggs, sunny side up, then place eggs over tortillas.
    Top with salsa and cheese. Yields 4 servings.
