Chinese New Year Rice - cooking recipe

Ingredients
    3 Tbsp. vegetable oil
    1 lb. boneless chicken breasts, cut bite-size
    3 1/2 c. chilled cooked rice
    3 green onions, sliced
    1 small carrot, shredded
    1 to 2 Tbsp. soy sauce
    1/8 tsp. pepper
Preparation
    Heat oil in large skillet or wok over medium high heat.
    Add chicken.
    Cook and stir until lightly browned.
    Add remaining ingredients.
    Cook and stir until heated through.
    Makes 6 servings.
