Winter Salad - cooking recipe
Ingredients

1 c. cooked lima beans (fresh or frozen)
1 c. green beans, cut into 1-inch lengths
1 c. cooked black-eyed peas
1/2 c. thinly sliced water chestnuts
1 medium-size red onion, chopped or cut into thin rings
1/4 c. wine vinegar
1 clove garlic, finely minced
7 oz. olive oil
salt and freshly ground black pepper
24 cherry tomatoes
1/4 c. chopped parsley

Here is a favorite recipe which I use very often, especially as a light meal for hot summer days, lunch or dinner.
Very easy and quick to prepare! lettuce.
Tear or slice thinly and place in bottom of salad bowl or large bowl.
