Cream Of Broccoli Soup - cooking recipe
Ingredients

1 bunch chopped fresh broccoli or 2 pkg. frozen
3 Tbsp. butter
3 Tbsp. flour
1/3 c. minced onion
3 c. milk
2 Tbsp. lemon juice
1 tsp. grated lemon rind
1 c. chopped Cheddar cheese
2 tsp. salt
dash of pepper
Preparation

Cover broccoli with water and cook about 4 minutes; set aside. Put butter and flour in a pan with minced onion.
Saute onion and then add milk.
Cook until it boils.
Then add cooked broccoli and 1 cup juice left over from boiling the broccoli.
Then add seasonings (lemon juice, lemon rind, cheese, salt and pepper).
If soup appears too thick, add more of the broccoli liquid.
Heat and serve.
Ham or bacon bits can be added for flavor or leave plain. Makes 6 servings.
