Turkey Frame Broth And Soup - cooking recipe

Ingredients
    1 turkey carcass or chicken
    3 ribs celery, cut in quarters
    1 carrot, cut in quarters
    1 onion, quartered
    2 cloves garlic, cut in halves
    1 bay leaf
    1 1/2 Tbsp. salt
    10 black peppercorns
    1/8 tsp. paprika
    10 c. water
Preparation
    Broth:
    Break up carcass and place in large pot; add remaining ingredients.
    Bring to boil over high heat; reduce heat to low, cover and simmer 2 hours.
    Remove carcass and cool.
    Remove turkey from bones and reserve (optional).
    Discard carcass. Strain broth and discard vegetables and seasonings.
