Quick Shrimp Skillet - cooking recipe

Ingredients
    1 Tbsp. reduce calorie margarine
    1/2 c. sliced green onion
    2 c diagonally sliced celery
    1/2 c. sliced carrots
    1 c. sliced mushrooms (fresh)
    2 cloves garlic, minced
    1/2 tsp. ground ginger
    1/8 tsp. pepper
    2 tsp. low sodium soy sauce
    3/4 lb. shelled and deveined shrimp (medium)
    2 Tbsp. water
    1 1/2 c. hot cooked rice, cooked without salt or fat
Preparation
    Add margarine to heavy skillet or wok; heat to medium high (325\u00b0) for 1 minute.
    Add onions, celery, carrots, garlic and mushrooms.
    Stir-fry until vegetables are crisp-tender.
    Add ginger, pepper, soy sauce, shrimp and water; stir-fry until shrimp are pink.
    Serve over rice.
