Scallops St. Jacques - cooking recipe

Ingredients
    1/3 c. minced onion
    1 Tbsp. butter
    1 1/2 Tbsp. minced shallot or green onion
    1 clove garlic
    1 1/2 lb. washed scallops
    salt and pepper
    1 c. sifted flour
    2 Tbsp. butter
    1 Tbsp. olive oil
    2/3 c. dry white wine
    1/2 bay leaf
    1/8 tsp. thyme
    1/4 c. grated Swiss cheese
    2 Tbsp. butter
Preparation
    Cook onion in 1 tablespoon butter slowly for 5 minutes (don't brown).
    Add shallot and garlic; cook 1 minute.
    Set aside.
