Potato Latkes - cooking recipe
Ingredients

5 large potatoes, finely grated
2 eggs
1 Tbsp. matzo meal
1 tsp. baking powder
1 tsp. salt
1 onion, grated
vegetable shortening (for frying)
Preparation

Squeeze most of water out of the grated potatoes using your hands.
Put them into a large bowl; add eggs, beaten.
Add matzo meal, baking powder and salt; stir well.
Add grated onion.
Heat shortening in heavy pan, fat hot but not smoking.
Drop latke batter by tablespoons; fry on both sides until crisp and brown. Drain on absorbent paper.
Serves 4.
