Black-Eyed Peas - cooking recipe

Ingredients
    16 oz. (1 lb.) dried black-eyed peas
    2 lb. ham hocks, ham, salt pork or other seasoning meat*
    1 small onion
    1 clove garlic
    pepper and salt to taste*
Preparation
    *Be careful not to add salt until you taste the liquid to determine what salt the seasoning meat produces.
