Vanilla Peach Pie - cooking recipe

Ingredients
    4 pounds ripe peaches, peeled, halved, pitted, each half cut into 6 wedges (about 8 cups)
    1/2 cup plus 1 Tbsp. sugar
    1/4 cup (packed) gold brown sugar
    1/4 cup all purpose flour
    1/4 tsp. ground cardamom
    1 vanilla bean, split lengthwise
    2 flaky pie crust disks (see recipe)
    Whipping cream (for glaze)
Preparation
    Position rack in lowest third of oven and preheat to 400 degrees.
    Combine peaches, 1/2 cup sugar, brown sugar, flour and cardamom in large bowl.
    Scrape in seeds from vanilla bean; discard bean.
    Toss to blend well.
    Let stand until dry ingredients are moistened, about 15 minutes.
