Holiday Cranberry Relish - cooking recipe
Ingredients

12 oz. frozen cranberries
4 small oranges (Sunkist thin peel works better)
1 1/2 c. sugar
1/2 c. grated coconut *
1/2 c. chopped walnuts *
Preparation

Wash oranges; do not peel. Cut oranges into quarters, removing seeds and any tough membranes.
Set aside.
Grind frozen cranberries in food processor 1/2 cup at a time to be sure all cranberries are ground.
Add prepared orange quarters one at a time until thoroughly ground.
Put cranberry-orange mixture into large bowl.
Stir in 1 1/2 cups sugar thoroughly.
Add coconut and walnuts, mixing together thoroughly.
Serve in glass/crystal bowl for eye appeal.
