Cold Rice Salad - cooking recipe
Ingredients

2 c. cooked long grain rice
1/4 c. chopped green onion
1 small green or red pepper, diced
1/3 c. celery, diced
1/4 c. ripe olives, drained and sliced
1/4 c. vegetable oil
1 1/2 tsp. wine vinegar
1/2 tsp. Dijon mustard
salt and pepper to taste
Preparation

Combine in a bowl, rice, green onion, pepper, celery and olives.
In another bowl, beat the oil, wine vinegar and Dijon mustard.
Toss well, seasoning to taste.
Toss well.
Chill. Serves 4.
