Real Italian Tomato Sauce - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 medium onion, cut in chunks
    8 oz. fresh mushrooms, sliced
    1 to 3 Tbsp. dried basil (3 times more if fresh)
    2 large cloves garlic, crushed or minced
    1 large bay leaf
    1 (28 oz.) can tomatoes
    1 (10 3/4 oz.) can tomato puree
    1 (6 oz.) can tomato paste
    salt and fresh ground black pepper to taste
Preparation
    Heat a large kettle over medium heat.
    Put in the oil, onion, mushrooms, basil and garlic.
    Cover and reduce the heat to medium-low.
    Stir frequently; you may need to add a tablespoon or two of water to keep it from sticking.
    When the onions are translucent, add the remaining ingredients, except the salt and pepper.
    Bring to a boil on high heat; then reduce to simmer and let cook for an hour or so, stirring occasionally and breaking up the whole tomatoes.
    Add salt and pepper to taste.
