Mango And Shrimp Salad - cooking recipe
Ingredients

12 shrimp, shelled and deveined
2 mangoes, peeled
1/4 lb. snow peas
4 green onions, chopped
1 c. pecans
salt and freshly ground pepper
3 Tbsp. vinaigrette or French dressing
Preparation

Halve shrimp if large.
Cut large slice from each side of the mango pit, then cut off the remaining flesh.
Cut the large mango slices into strips.
Blanch snow peas in boiling water for 1 minute.
Drain.
Cook under cold running water.
If preferred, snow peas can be served raw in the salad.
