Aunt Harriet'S Taboulie - cooking recipe

Ingredients
    2 c. bulgur wheat (cracked wheat cereal)
    1 c. warm water
    1 c. parsley, chopped
    1/2 c. scallions (I used 1 bunch)
    3/4 plum or cherry tomatoes
    1 c. lemon juice
    1/4 c. to 1/3 c. vegetable oil (I used 1/4 c. with this recipe; 1/3 c. OK)
    salt and pepper
    2 Tbsp. fresh mint or 1 tsp. dried mint
Preparation
    Soak bulgur with water for 1 hour.
    Cut in scallions, tomatoes and parsley.
    Refrigerate before serving to allow wheat to absorb moisture.
