Tomato-Basil Vinaigrette - cooking recipe
Ingredients

2 ripe tomatoes, peeled, seeded and chopped
1 clove garlic
1/4 c. olive oil
4 Tbsp. fresh basil, chopped or 1 tsp. dried basil
1/4 c. balsamic vinegar
1/2 tsp. sugar
1 Tbsp. whole grain or Dijon mustard
1/4 tsp. salt
1/4 tsp. ground black pepper
Preparation

Combine all ingredients in blender or food processor; mix thoroughly.
Allow to stand at least 15 minutes for flavors to blend.
Serve at room temperature.
Other fresh herbs, such as parsley, thyme or rosemary can be substituted for basil.
