Zucchini-Tomato Casserole - cooking recipe

1/2 c. chopped onion
2 Tbsp. oil
2 medium zucchini, scrubbed and sliced
1 lb. canned tomatoes, chopped
1/4 tsp. oregano
1/2 tsp. salt
1/4 tsp. Italian seasoning
shredded Cheddar cheese

Preparation

Saute onion in oil.
Add vegetables and seasonings.
Simmer for 15 minutes.
In 2-quart casserole, layer: half of vegetable mixture, cheese, other half of vegetable mixture and croutons. Pour over vegetable juices and sprinkle with more cheese.
Bake at 350\u00b0 for 15 minutes.
