Palcinka (Italian Sweet Crepes) - cooking recipe
Ingredients

2 eggs, whisk in bowl until combined
2 c. milk
1/2 c. club soda
1/4 c. sugar
grated zest of 1 lemon
1/4 tsp. salt
1 Tbsp. dark rum or flavoring
1 tsp. vanilla
2 c. flour
6 Tbsp. melted butter
grated zest of 1 orange (optional)
Preparation

Mix eggs, milk, soda, sugar, vanilla, salt, rum and vanilla until the sugar is dissolved into the egg.
Gradually sift flour into the mixture.
Stir in butter until it is the consistency of melted ice cream.
Add lemon (and orange) zest; stir.
Fry crepes in vegetable oil for 30 seconds on each side.
Serve with Mascarpone Spread.
