China Scallops - cooking recipe

Ingredients
    1 1/2 lb. fresh or thawed frozen sea scallops
    1 medium cucumber
    1/4 c. butter or margarine
    1 (4 oz.) can pimento, diced
    1 1/4 tsp. salt
    1/4 c. ketchup
    1 c. milk
    2 tsp. cornstarch
    2 Tbsp. dry sherry
    6 c. hot fluffy white rice
Preparation
    Slice scallops crosswise into 1/4-inch thick disks.
    Pare cucumber; cut lengthwise into 16 strips, then crosswise into fourths.
