Green Tomato Relish - cooking recipe

Ingredients
    4 c. green tomatoes, coarsely ground
    6 large bell peppers, coarsely ground
    3 c. cabbage, finely shredded
    4 cucumbers, coarsely ground
    4 c. onions, diced very fine
    2 jalapeno peppers, ground fine
    4 c. vinegar
    4 c. sugar
    2 c. water
Preparation
    Mix all vegetables well.
    Sprinkle with 1/2 cup salt and let stand for 1 hour.
    In the meantime, put 4 cups vinegar, 4 cups sugar and 2 cups water in a large boiler pot.
    Rinse vegetables and pour into vinegar mixture.
    Heat until mixture comes to a boil. Simmer on low flame for 3 minutes.
    Pour into hot sterilized jars and seal as per directions.
    Makes 6 pints.
