Ingredients

1 c. flour
2 tsp. baking powder
1 tsp. sugar
1/4 tsp. salt
1 c. milk
1/4 c. margarine or butter, melted
1 egg, separated
Preparation

Mix flour, baking powder, sugar and salt in a medium bowl. Stir in milk, margarine and egg yolk until blended.
Beat egg white in a small bowl on high speed until stiff peaks form.
Fold flour mixture in egg white.
Pour 2/3 cup of batter into center of hot waffle iron.
Bake until steaming stops.
Makes three 8-inch waffles.
