Low-Fat Bran Muffins - cooking recipe
Ingredients

1 c. plain flour
2 tsp. baking powder
1/2 tsp. each: soda and cinnamon
2 c. bran flakes
1/2 c. applesauce
1 1/4 c. low-fat milk
1/2 c. firmly packed brown sugar
1 egg
Preparation

Heat oven to 400\u00b0.
Mix flour, baking powder, soda and cinnamon in a large bowl.
Mix bran flakes, milk and sugar in another bowl.
Let stand 5 minutes.
Stir in egg and applesauce. Add to flour mixture; stir just until moistened (batter will be lumpy).
Spoon batter into muffin cups 2/3 full and bake for 18 minutes.
Serve warm.
