Spicy Peanut Chicken - cooking recipe

Ingredients
    2 lb. boneless skinned chicken breasts
    1 tsp. salt
    1 Tbsp. olive oil
    1 Tbsp. flour
    1/2 tsp. ground cumin
    1 Tbsp. creamy peanut butter
    3/4 c. reduced sodium chicken broth
    1/4 tsp. pepper
Preparation
    Combine chicken, salt and enough boiling water to cover in large skillet.
    Return to boiling over medium heat.
    Reduce heat to low; cover and simmer 18 to 20 minutes or just until tender. Remove to platter.
    Cover half the chicken with foil and keep warm. Cool remaining half slightly; wrap and refrigerate for another meal.
