Red Rice - cooking recipe
Ingredients

6 c. cooked rice, rinse well
6 large ripe tomatoes, diced and peeled
1 large onion, slivered
2 lb. hard cooked sweet bacon, broken small
1 Tbsp. salt or salt substitute
1 tsp. black pepper
1 large green pepper, fine diced
1 c. tomato paste
1 tsp. vinegar (cider if possible)
1 tsp. chopped garlic
1 Tbsp. brown sugar
1 tsp. crushed red pepper
Preparation

Cook all ingredients in a large pot; cook until tomatoes have fallen apart and onions have become tender.
Stir in rice, then place in serving dish.
This side item is a great compliment to fried chicken, chops and grilled steak.
Meal should be served with biscuit and honey to round out the perfect Southern Charm.
Serves 8 to 12.
