Squash Fritters - cooking recipe

Ingredients
    4 small squash, finely chopped
    1 onion, finely chopped
    salt, pepper, garlic salt and parsley flakes to taste
    1 egg, beaten
    1 tsp. baking powder
    2 Tbsp. sugar
    flour
    oil (for deep frying)
    confectioners sugar
Preparation
    Cook squash and onion in small amount of water in saucepan until tender; drain.
    Add salt, pepper, garlic salt and parsley flakes; mix well.
    Add egg, baking powder and sugar; mix well. Add enough flour to mixture to form stiff dough.
    Roll 1 teaspoonful at a time in flour to coat.
    Deep fry in hot oil until brown; drain.
    Roll in confectioners sugar.
    Yield:
    36 servings.
