Potato Broccoli Puree Soup - cooking recipe

Ingredients
    1 onion, chopped
    2 ribs celery, chopped
    3 carrots, sliced
    2 stalks broccoli, chopped
    pepper to taste
    1 c. plain low-fat yogurt
    1 Tbsp. olive oil
    4 potatoes, diced
    1/4 tsp. dill
    2 qt. water (for stock)
Preparation
    In soup pot, saute onion and celery in olive oil for 4 minutes.
    Add carrots, potatoes, broccoli, seasonings and stock. Bring to boil.
    Reduce heat to medium-low.
    Cook for 25 minutes. Puree in blender.
    Stir in yogurt and reheat.
    Makes 8 (1/2 cup) servings.
