Carrot And Zucchini Muffins - cooking recipe

Ingredients
    1 3/4 c. unsifted, self-rising all-purpose flour*
    3 Tbsp. granulated sugar
    1 c. coarsely grated carrots
    2 tsp. finely grated orange rind
    1/4 c. vegetable oil
    1/2 tsp. ground cinnamon
    1 c. coarsely grated zucchini
    2 eggs
    1/4 c. orange juice
Preparation
    * If you wish to use all-purpose flour which is not self-rising, add 2 1/2 teaspoons baking powder and 3/4 teaspoon salt to flour mixture.
