Calamati Con Ponodoro - cooking recipe

Ingredients
    2 lb. squid
    4 Tbsp. olive oil
    pinch of oregano
    1 tsp. chopped parsley
    1 c. solid-pack tomatoes
    1/2 c. dry sherry
    2 cloves garlic
    salt and pepper to taste
Preparation
    Have squid thoroughly cleaned.
    Cut into small pieces; wash well.
    Pour olive oil in saucepan and heat; brown garlic about 3 minutes.
    Add squid; cover and saute 10 minutes.
    Add salt, pepper, oregano and sherry; cook 10 minutes longer over low flame. Add tomatoes and parsley; cover and cook 15 minutes or until tender.
    Serves 4 to 6.
