Dried Pea Sausage - cooking recipe

Ingredients
    2 c. cooked black-eyed peas
    salt and pepper to taste
    enough flour to batter the patties
    1/4 tsp. sage
    dash of red pepper
    1 egg
    2 Tbsp. milk
Preparation
    Cook peas until they are soft; mash peas.
    Mix mashed peas with salt and pepper, sage, red pepper, egg and milk (use milk if the mixture is dry).
    Add flour to mixture and form patties.
    Fry in about three tablespoons of oil or lard, browning on both sides.
