Carolyn'S Zucchini Muffins - cooking recipe

Ingredients
    1 c. oil
    1 1/2 c. sugar
    3 eggs
    2 c. shredded zucchini (skin on)
    1 c. crushed pineapple, slightly drained
    3 c. flour
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. baking powder
    1 tsp. vanilla
    1 c. nuts, chopped
    3/4 c. golden seedless raisins
Preparation
    Beat oil and sugar; add eggs one at a time and beat well.
    Add zucchini and pineapple.
    Add all other ingredients.
    Mix well. Fill slightly greased muffin tins about 1/2 to 3/4 full.
    Bake at 350\u00b0 for about 25 minutes or until toothpick comes out clean.
