Doug Cooper'S Apricot Cashew Glazed Turkey - cooking recipe

Ingredients
    4 turkey breast slices
    1/4 c. dried diced apricots
    1/4 c. diced cashews
    1/4 c. white Zinfindel
    1/4 c. orange juice
    1/2 c. maple syrup
    1/4 c. raspberry jelly or some type red jelly
    season salt to taste
    1/2 c. canola oil
Preparation
    Heat a small pan over moderate heat and saute cashews in oil for approximately 1 minute, then add in apricots and cook for 1 minute.
    Pour in orange juice and Zinfindel.
    Reduce to half. Finish by adding syrup and jelly.
    Let cook until it thickens. Lightly season turkey slices and grill for approximately 4 minutes on each side.
    Slice turkey on an angle and serve over glaze. Serve with yam slices.
