Carrot Puffs - cooking recipe

Ingredients
    1 lb. carrots, peeled and cut in 1-inch pieces
    1/2 c. oleo, melted
    3 eggs
    1 c. sugar (less, if desired)
    3 Tbsp. flour
    1 tsp. baking powder
    1 tsp. vanilla
Preparation
    Grease an 8-inch square dish.
    Boil carrots in salted water, uncovered; simmer for 20 minutes or until tender.
    Drain carrots. Put oleo, eggs, sugar, flour, baking powder and vanilla in blender.
    Add carrots, a few at a time, and puree.
    Pour into prepared baking dish.
    Bake at 350\u00b0 for 45 minutes or until firm. Let stand for 5 minutes before serving.
    May be made day ahead of time and refrigerated.
    Bring to room temperature before cooking.
