Eggplant Caviar(Microwave 5 To 7 Minutes.) - cooking recipe

Ingredients
    1 medium eggplant
    1 medium ripe tomato, peeled, seeded and chopped fine
    1 medium onion, chopped fine
    1 clove garlic, minced
    1 Tbsp. virgin olive oil
    1 Tbsp. balsamic vinegar
    1 tsp. brown sugar
    1/2 tsp. salt
    1/4 tsp. black pepper
Preparation
    Prick eggplant with fork in several places; place on paper plate or towel.
    Cook on High for 6 minutes until soft.
    Let cool in refrigerator for 30 minutes.
