Albondigas Soup - cooking recipe

Ingredients
    2 lb. ground beef
    2 eggs, slightly beaten
    1 large onion, chopped
    1 c. celery, chopped
    1 1/2 c. carrots, chopped
    1 c. potatoes, chopped
    1 clove garlic, minced
    1/2 tsp. chili powder
    1 (8 oz.) can tomato sauce
    1/2 c. raw long grain rice
    1 tsp. ground cumin (optional)
    1/2 c. chopped cilantro
    salt and pepper to taste
    3 qt. boiling water, salted
    drop of hot sauce
    1 can kidney beans (with juice)
    1/4 tsp. oregano
Preparation
    Mix ground beef, eggs, garlic, rice, cumin and salt and pepper.
    Make into 1 1/2-inch balls.
    Drop into boiling water. Add onion and all else; reduce heat, cover and let simmer 1 to 1 1/2 hours until rice/meat mixture is tender.
    Serve hot soup garnished with chopped cilantro, accompanied with warm tortillas and/or corn bread.
    A dash of Tabasco adds zest.
