Ingredients

1 c. fresh strawberries or 1 c. frozen, thawed
2 Tbsp. frozen orange juice concentrate
1 Tbsp. lemon juice
1/2 tsp. grated lemon zest
pinch of salt
1 Tbsp. butter
3 eggs, separated
1 c. low-fat cottage cheese
1/4 c. flour
1 Tbsp. sugar
about 1 Tbsp. vegetable oil
Preparation

Place the strawberries, orange juice concentrate, lemon juice and lemon zest in a blender or food processor; blend until smooth. If using fresh strawberries that are not very sweet, you may want to add a little sugar to the sauce at this point.
If you do, blend the sauce briefly to distribute the sugar.
Set aside.
