Bran Oatmeal Muffin Mix - cooking recipe
Ingredients

2 c. 100% bran (not cereal, get at health food store)
2 c. boiling water
1 c. shortening
3 c. sugar (half white, half brown)
4 eggs
1 qt. buttermilk
5 c. flour
1 tsp. salt
5 tsp. baking soda
4 c. uncooked oatmeal
Preparation

Pour water over bran.
Set aside.
Cream sugar, shortening, eggs, buttermilk, salt and soda.
Add bran last.
Make in cupcake papers.
Fill half full. Bake at 375\u00b0 for 15 to 20 minutes. Batter will keep for 2 to 3 weeks in refrigerator.
If baking from refrigerator, muffins may take 5 more minutes to be done.
Add raisins, nuts, mashed banana, dates or your choice of extras just before baking.
