Mashed Potato Cakes - cooking recipe
Ingredients

2 c. mashed potatoes
1/2 c. grated Parmesan cheese
1/3 to 1/2 c. bread crumbs
2 eggs
Salt and pepper to taste
Hot oil for frying
Preparation

Mix first 5 ingredients together, then drop by large spoonfuls into hot oil in skillet.
Flatten each to form a cake shape.
Fry until crisp and brown on both sides, turning once.
